The cause: The bite from certain ticks (like Ixodes ricinus or the star tick) transmits a molecule called alpha-gal (galactose-alpha-1,3-galactose) into the human body.
The reaction: The immune system reacts to this molecule by creating antibodies. When you consume mammal meat (beef, pork, lamb, game) that naturally contains alpha-gal, the body triggers a severe allergic reaction.
Symptoms to watch out for
Unlike classic food allergies, the symptoms of alpha-gal syndrome are notably delayed, typically occurring 3 to 8 hours after the meal:
