Ledger lists the ST33K1M5 Secure Element and CC EAL6+ certification for both the Nano Gen5 and Flex. Both list Bluetooth, USB-C and NFC. The visible differences are mainly the display and finish: Gen5 uses a 300 × 400 monochrome E Ink touchscreen with a plastic frame; Flex uses a 480 × 600 16-grayscale E Ink touchscreen, Gorilla Glass and an aluminum frame.

That makes the choice more specific than “which one is safer?” A larger, richer display might be worth paying for if you frequently interact with the device and value readability. If your workflow is less screen-heavy, check whether Gen5 already covers the device features you need. Confirm current pricing and host compatibility directly with the manufacturer before buying; those details can change.
