A fee has two parts: how much work your transaction requires, and what the network currently charges per unit of that work. A plain transfer needs little work; interacting with a contract needs much more.

So the same transfer between the same two addresses can cost cents at one hour and many dollars at another, purely because the second number moved. Nothing about your transaction changed. If a fee looks absurd, waiting is often the entire fix - and if a transfer fails, the work already attempted still consumed fees, which is why a failed transaction is not automatically a free one.
