Volume is simply how much of an asset changed hands in a given period, in SHELL's case measured in SHELL tokens traded. On its own, a volume number like "13.40M SHELL traded today" doesn't tell you much, because you don't know if that's a lot or a little for this particular asset.
That's where the volume moving average comes in: it averages volume over several recent periods so you have a baseline to compare against.
