A few things to note about the two types of Rollup proofs:
1) Once a fraud proof is validated, the incorrect result is overturned, and the party that submitted it has their stake slashed.
2) Optimistic Rollup initially assumes that the submitted result is correct. During the challenge period, anyone can submit a fraud proof to challenge it.
3) Withdrawals from Optimistic Rollups have a challenge period of about a week, so if you need the money urgently, don’t wait until the last minute to use the official bridge.
$ARB and $OP use Optimistic Rollup, while $STRK uses the ZK approach.

This is just my personal opinion, not financial advice.
