At Shimen Reservoir in Xinjiang, 130,000 salmon are being harvested and brought to market. The clear, cold meltwater from the Kunlun Mountains is rich in dissolved oxygen. Stocked two years ago, the fish now weigh 2–3 kilograms each. Sold by order, they are caught fresh and shipped chilled straight from the Kunlun Mountains to dining tables.
