My hometown,
my birthplace,
is famous for tofu products.
So ever since I was little, I’ve especially loved eating all kinds of tofu,
especially this kind of fried tofu.
It’s wonderfully fragrant—so oily and aromatic,
with a very strong bean flavor.
Coincidentally, today while strolling through the market, I ran into a fellow countryman.
Every time it’s a 4 or a 9 on the calendar, they come set up a stall.
It’s been a long time since I’ve tasted such delicious tofu.
It really is the flavor of childhood.
In the past, the tofu I bought at the market always tasted just so-so.
I always heard the elders back home say that,
if you want great-tasting tofu,
water quality is very important.
Even if you use the same kind of beans,
the tofu will taste different once it’s made somewhere else.
